Let’s start with some etymology: NEO is a latin word that means new. Naples (in Italian: Napoli) comes from a Greek word “NEAPOLIS” that means “NEW CITY” (Polis = city). Many settlers were moving to this city before its born: any time something new was landing to Naples, the city was taking it, and learning from it, and any time the city “born again” as a “new city” (NEA - POLIS) with something new in it. By addressing a pizza style as NeoNeapolitan, we emphasize the fact that Neapolitan style pizza, same as the city that named it, is in a continuous evolution. I personally heard about this style during a trip to Los Angeles with some Canadian chefs. The purpose of the trip was to have a close look to some new style of pizza that was growing in popularity in LA. The pizza had a very charcoal crust, crunchy dough, very tasty and local ingredients, sourdough aftertaste, long maturation process… Someone asked me “can we call it Neapolitan??” I couldn’t have say that was Neapolitan, even if it was very close to it. That was a traditional style but with a strong similarity to the Neapolitan. Then, a chef from LA, made everything clear by saying  “this is the NeoNeapolitan” and after a while I saw this style growing in popularity all around the world. I could be wrong, but I’m pretty sure that this style was born in LA, when some chefs started to play around with the Neapolitan STG rules, by making the Neapolitan pizza recipe more sophisticated. NEO-NEAPOLITAN STYLE Today I was thinking about this style of pizza: I was asking to myself “is this a real style? should I talk about it?”; then I thought at all the controversial way of thinking, at the criticism that could grow around my explanation of this style… so, because I like these kind of arguments: here I am writing about the NeoNeapolitan style (or, as many people call it: NewNeapolitan or NeoPolitan).
